Whole-wheat figs and nuts pie πŸ₯§
RECIPE: β€’ 200 gr whole-wheat four β€’ 300 gr plain flour β€’ 2 eggs β€’ 250 gr cold butter β€’ 200 gr sugar β€’ 10 ml vegetable oil β€’ 2 jars (500 gr or so) homemade figs marmelade β€’ 3/4 cup of chopped nuts β€’ some extra moscovado brown sugar to sprinkle β€’
First of all, make the dough. In a bowl put the chopped cold butter and the flour and work it with your finger until it becomes a crumbly humid thing then add the sugar and mix. Now time for the eggs and oil. Kneed the dough with your hands until it becomes smooth but a little little bit sticky. Cover in plastic wrap and let it rest in the fridge for 30/60 min. When it’s ready, cut it in two and roll it down in two circles (40 cm each) and place the first circle in your (lined with parchment paper) pie mold then add the figs jam, the chopped nuts and sprinkle the brown sugar over. Now cover your pie with the second dough circle and decorate as you like.
Bake at 200C for 20 min or until crispy and golden.

Pumpkin Spice and Chocolate Marble Loaf Cake πŸŽƒπŸ«
RECIPE: β€’ 2 cups plain yogurt β€’ 50 ml milk β€’ 250 gr flour β€’ 200 gr sugar β€’ 2 eggs β€’ 100 ml corn oil or sunflower oil β€’ 1 tablespoon of baking powder β€’ 2 tablespoon of cocoa powder β€’ 1/2 tablespoon of pumpkin spice β€’ a pinch of salt β€’ 2 extra tablespoons of milk β€’ 1/2 cup of chocolate chips
In a bowl mix the yogurt, the eggs, the milk, the oil and the sugar until it becomes a silk batter, then put in the sifted flour, salt, baking powder and pumpkin spice. And mix til well combined. Take your loaf baking mold and spray some nonstick spray or butter it all, then pour in half of the batter. Now take again the rest of the batter and add the cocoa powder, the chocolate chips and the two extra tablespoons of milk and stir well. Now pour the chocolate batter over the white batter in your mold and give a gentle and quick stir, don’t over stir otherwise it will mix up and you won’t be able to get the Marble effect.
Bake at 180C for 20 minutes or so. Always try the toothpick.

I don’t buy my grandmama loves them so I made her a fig pie πŸ₯§
The base is a classic shortcrust pastry, while for the inside I made a cream with yogurt, cream cheese, lemon and powdered sugar, then place the figs and topped them with lemon juice and sprinkled some caster sugar!

Carrot cake 🍰
RECIPE: β€’ 150 gr finely chopped carrots β€’ 200 gr flour β€’ 200 gr cane sugar β€’ 1 cup of yogurt β€’ 100 gr melted butter β€’ 10 ml milk β€’ 2 tablespoon baking powder β€’ 1/2 cup chopped walnuts β€’ 3 eggs β€’ 1 tablespoon cinnamon β€’ 1 teaspoon grounded nutmeg β€’ 1 tablespoon vanilla extract β€’ for frosting: 200 gr cream cheese and 1/2 cup powder sugar
In a bowl beat the eggs with the sugar then add the melted butter, the milk and the yogurt. Mix well then add the chopped carrots, walnuts, vanilla, cinnamon and nutmeg. Mix again and add the sifted flour. Give it a good stir, pour the batter in a buttered and floured baking mold and bake at 180 C for 25 min.
When your cake is cold, take it out of the mold, spread your cream cheese topping and decorate!
