cio (pizza house), where a team of 30 pizzaiolos (pizza masters) make up to 9,000 pies a day. Talia di Napoli’s proprietary family recipe dates back to 1889, including the team’s precious mother dough, which rises naturally for 24 hours. Toppings are meticulously sourced from small family farms across Southern Italy. After emerging from the wood-fired oven, each pizza is immediately “put to sleep” using a cutting-edge cryogenic freezing method, invented by co-founder Edouard Fredo’s Uncle Guido. Talia di Napoli is poised to shake up the frozen pizza aisle, which has (until now) been rooted solely in convenience at the expense of quality.
