Red Velvet Cake recipe

INGREDIENTS:

90g (3/4 stick) unsalted butter

Cake Base (3 tiers):

3 sponge cakes (vanilla or red velvet, baked in 3 different sizes: 10”, 8”, 6”)

Doctor’s Coat Cake Recipe

Ingredients

For the Sponge (3 tiers):

3 cups all-purpose flour

2 ½ tsp baking powder

½ tsp baking soda

½ tsp salt

1 cup unsalted butter (softened)

2 cups granulated sugar

4 large eggs

2 tsp vanilla extract

1 ½ cups buttermilk

For the Filling:

3 cups heavy whipping cream

½ cup powdered sugar

1 tsp vanilla extract

Optional: chocolate ganache or strawberry jam

For Frosting & Decoration:

1.5 kg white fondant (coat base)

200 g black fondant (buttons & details)

200 g grey fondant (stethoscope)

100 g blue fondant (shirt under coat)

Buttercream (for crumb coating)

Instructions

1. Bake the Sponge Layers

1. Preheat oven to 175°C (350°F). Grease and line three cake pans (different sizes for tiered effect).

2. Mix flour, baking powder, baking soda, and salt in one bowl.

3. In another bowl, cream butter and sugar until light. Add eggs one at a time, then vanilla.

4. Alternate adding dry mixture with buttermilk until smooth.

5. Divide into pans and bake for 25–30 minutes. Let cool fully.
