Sourdough Burger Buns: the recipe!
It's time to "reveal" the recipe, although it's not much of a secret!
I actually based my recipe on the one from with some tweaks in terms of proofing time, but it's basically his. Go follow him and check his YouTube channel too, there's plenty of great recipes there! Thanks Daniel for the great content!
Ingredients for 6 buns:
40g milk
2 eggs
60g sourdough starter
3g sugar
200g white flour
4g salt
90g butter (diced and at room temperature)
Process:
It's better if you use a stand mixer, as the dough is not very hydrated, and it can get very hard to do it by hand.
Put milk, eggs, starter, sugar and flour in the mixer and start mixing for a few minutes, until the dough has some structure and elasticity.
Then add salt and butter and keep mixing, until all the butter is incorporated and the dough is quite elastic and can easily detach from the mixing bowl.
Put the dough in a bowl, give it a round shape, cover the bowl with cling film and let it rest at room temp until it's almost double in size (1.5 times the size). It really depends on your room temperature and the activity of your starter, so be prepared to wait a few hours if necessary. Once done, put it in the fridge and let it rest overnight.
Five hours before the baking, take the dough out, split it in 6 equal parts and roll it in balls. Put them on a tray with some parchment paper on, and leave the tray in a warm place. I left mine into the oven with the light on.
When the buns will be doubled in size, brush them with a mix of milk and egg (equal parts) and bake them for 20 mins on a pre-heated oven at 190ºC
