Whole wheat seeded sourdough.

When i started the sourdough journey 2years ago. The whole wheat sourdough was intimidating, the crumb would be dense, flavours missing, hydration off.
It took a lot of experimentation, trials to reach here.
The key is using locally milled flour, my go to is . Finding that perfect hydration; 80-85%. Mixing in seeds for texture, crunch and nutritional benefits are added advantage.
This is our WW seeded sourdough, no improvers, no stabilisers just naturally fermented goodness.

Why are all bakers obsessed about the crumb?

Ask any baker, the nervousness is always there while slicing a bread loaf. The wait for the loaf to cool down in excruciating.
Once sliced, the crumb can tell all the details about the bread.
- hydration : high hydration = open crumb
- flour used : whole wheat will have tighter crumb over APF
- fermentation: the gaps in crumb are the CO2 bubbles

A common misconception is that only high hydration dough have good open crumb but dough made with quality flour, mixed properly, strong well fed Levain and proper fermentation will always result in good gluten structure, in turn result in great crumb.
