When people despise paneer, I cringe. Obviously, because I love it in mostly all forms — from fried, grilled and gravy-dipped to having it barbecued after hours of marination. It’s just amazing how one ingredient can be used in so many different ways and many delicacies can be churned out of it. You really just need to know how to do it.
Hopefully very soon, I will be writing in detail about my experiments with paneer. For now, it’s paneer tikka on my mind.

The last leg of spring deserved a celebration. Here it is — Moorai Papad. A deep-fried dish made with rice flour and grated radish with added flavours (ginger, chillies, and condiments). Topped with home-made butter, it's crispy, spicy and a delicious delicacy.
