Headed home after a long day of teaching at Technological University Dublin. One of my 4th year students is developing a laminated, savoury pastry. The photo is her work in progress, but delicious. It’s a vegan laminated pastry with green pesto , basil, onion, mushroom and bell peppers. Before anyone asks, I can’t share the recipe ... as this is only week 3 of a 12 week program and my students work. Splendid results so far. Working in PPE is challenging , I live three hours + from the University, so it’s a six hour + commute plus a 12 hour day at the University. I am fortunate to be teaching the next generation of bakers and I truly love my work, my students and colleagues . It is an inspiring place to be at! TU Dublin rocks @tudublinfoodforum

Last stop today, remaining in the Far East, The Art of Lamination departs Japan, arriving to beautiful Taipei, Taiwan . Our last call of the day is with a dear friend Lulu Lee. Lulu is an amazingly talented individual, organised, creative and always busy. She was amazing to us when we visited Shanghai last year for Coupe Louis Lesaffre. We got to hang out with Lulu and her Taiwanese international team. We had a wonderful and memorable meal, where a few drinks were had and a few jokes were told with all the crew before we departed China. I returned to University and to formal education as a mature student 2014 to complete a BSc (Hons) degree in Bakery and Pastry Arts Management. It gave me time to conduct research into many things including the use of seaweeds in baked products . One of the many products I developed were Seaweed Croissants.

Initially I added the seaweed into the dough, but found that it was like Wholemeal , and volume suffered. So I added the seaweed to butter to make seaweed butter. The results dramatically improved and the product was delicious with applications such as seafood canapés. Below I am posting photos of the process I used.

I later went on to complete a masters MSc, in Food Product Development and culinary innovation. I decided to focus my masters project on lamination. Much of my research for the masters practical module was a study of lamination and it paved the way for my book, The Art of Lamination. I graduated aged 51 years with first class honours, it was the best thing I ever did!

I am still learning guys, I don’t know it all, but always happy to explore, document and pursue new and innovative ways to make products both myself and with my students. Life lesson for everyone, it’s never too late to re-educate, to make changes with your life, follow your passion! Most of all, follow your dreams and do what makes you happy. My family and my beloved wife Bogna Griffin supported me all the way and I could not have achieved all of this without them.

I just want to thank you so much for sharing your lovely recipes! We were all really sad in my family when the bakery closed so its so great to be able to try and make these lovely things ourselves now. One of the very few good things to come out of this lockdown! Made the raspberry scones today with my daughter, really delicious!
