FINNISH GINGERBREAD 🇫🇮

It's Christmas, so it's time to dust off an old recipe that's been kindly passed on by Finnish friends. These gingerbread are light and crisp. They fill me with warmth when I make and eat them. Maybe it's the spices, or maybe it's the kindness of others that brings this feeling 🙏❤️😋🥰

APPLES 🍎🍏

We have been gifted some apples recently (thanks Anne). We also are grateful to have an apple tree at home. The kids have been busy picking this week and we have an Upside Down Apple Pastry and an Apple & Cinnamon Sourdough available at the Letterkenny market this morning

GOOSEBERRIES 🙌😍🤤

We got super excited after buying some delicious gooseberries from yesterday. My experience with gooseberries to date has been that sour twisted face feeling. But the red variety is new to me and they have a lovely sweetness, rounded off with a tangy finish.

Inspired by my neighbour's gooseberry and almond tart (thanks Teresa 🙏) we decided to try a gooseberry and almond croissant.

They are just out of the oven and will be available at this morning from 9am
