Natural, uncomplicated and utterly delicious are a few words I would use to describe the little slices of heaven that my grandmother, and later my mother and I would frequently bake together for our family in Germany. I still have such vivid memories of the smells of Kuchen wafting through the house at the weekend awakening all my senses. None of the fancy frosting and artistry that goes into cake
baking nowadays. For me, a slice of homemade German cake will always be my first choice over a Michelin star baked cake any day. An irresistibly delicate cake base, topped with seasonal fruit such as plum; baked till oozing and bubbling away in the tray. Every mouthful will excite your tastebuds whilst they discover the sourness of the plums, quickly followed by the sweetness of melt-in your-mouth crumbles sprinkled with love. Now I think you can begin to understand why one slice is simply never enough! Work and travel over the years had kept me away from my beloved cake. It wasn’t until my family and I got stuck in Europe during the Covid-19 outbreak that I had the chance to revisit the familiar smells and tastes that had kept me so nostalgic all these years. During the social distancing lockdown, my mother and I baked and baked just like we used to. My life has changed so much since then, but that unforgettable taste of home never changes. Still natural, still delicious and one slice was still never enough. Finally, back in Hong Kong again where I have lived for the past 10 years; I want to share these little slices of heaven with you. A perfectionist by nature, after countless attempts of tweaking the original recipe ever so slightly, I hope you will agree that I have done justice with my adaptation of this timeless classic. I am certain you will agree that one slice is simply not enough.
