The pursuit of the ultimate puff begins with choosing the right fat.
We forgo ordinary butter with its one-dimensional flavor, insisting instead on using fermented butter (Beurre de Baratte) — more time-consuming to produce and higher in cost.

Its melting point and elasticity allow our bakers to create more even, finer layers during folding and rolling. Once baked, it releases not a straightforward oily aroma, but a multi-dimensional fermented butter fragrance — a mild, yogurt-like tang reminiscent of fresh cheese, perfectly balancing the richness of the pastry.

This is not just an upgrade in ingredients — it is a commitment to authentic baking craftsmanship.
