🥭 Mango Float Recipe⁠ by the cool 😎

Mango lovers, rejoice! Mango season is still here, and there’s no better way to celebrate than with this dreamy Mango Float – a classic Filipino dessert that's as easy to make as it is delicious. ⁠

With just a handful of ingredients like Sweetened Condensed Coconut Milk, crushed biscuits, vanilla extract, and of course, juicy mangoes, you’ll have a dessert that’s creamy, refreshing, and oh-so-satisfying. 🍨✨ ⁠

INGREDIENTS⁠
Vegan Mango Float⁠

◾2 cups coconut whipping cream ⁠
◾1 can sweetened condensed coconut milk⁠
◾1 tsp vanilla extract ⁠
◾200g Digestives biscuits plain original (or similar plain sweet biscuits), finely crumbed ⁠
◾ 3 ripe mangoes, diced⁠

METHOD⁠

◾ Place Nature's Charm@coconut whipping cream, sweetened condensed coconut milk and vanilla extract into stand mixer bowl. Whisk on a medium speed until mixture doubles - this may take about 5 minutes. ⁠

◾ In a rectangle baking dish, place in a third of the whipped cream mixture and evenly spread, followed by a layer of biscuit crumbs and then a layer of a third of the diced mango. ⁠

◾ Repeat the above step and then finish with a layer of cream and mango. Place in the fridge overnight to set.⁠

自家製椰子乳酪 (1L)
Home made coconut yogurt (1L) (scroll down for English recipes)

準備材料:
1. 三罐@Nature’s Charm 純天然椰子奶 400ml,其中兩罐反轉放雪櫃
2. 一包益生菌粉 (在淘寶買的益生菌粉),或買超市雪櫃裡面嘅椰子乳酪取100g 做starter 。 (用益生菌capsule 未必成功,因你唔知係咩真係裡面仲有活菌)
3. 一個乳酪製作器(我用只加熱水,不用電那款)

做法:
1. 先用熱水消毒容器和羹。
2. 先將一罐椰子奶整罐倒進容器裡面,加進益生菌或乳酪starter, 搞拌直至益生菌粉完全溶在椰漿裡面。把另外兩罐椰漿,只畢所有白色的漿,水不要,加進容器裡面徹底搞勻。封蓋,然後放進加了熱水的乳酪製作器。
3. 大概發酵24-40個小時左右(按室溫約30幾度來計算大概28小時,視乎室溫而定),如果冬天天氣冷,需要定時換熱水進保溫罐裡面。(夏天大概24-30小時,冬天大概45小時)
4. 大概28小時後拿出來會見到水在下面漿在上面,把水同漿搞勻後倒進玻璃瓶放雪櫃,雪一晚第二天椰子乳酪就完成可以享用。

PS。 因為Nature’s Charm純椰漿係完全無添加劑,所以係會漿水分離,顏色帶微灰。

Home made coconut yogurt (1L)

required materials:
1. 3 cans ’s Charm all natural coconut milk. (out of which 2 can put in the fridge upside down overnight)
2. one sachet of probiotic powder (mine is from Taobao probiotic powder) or use 100g of coconut yogurt (the real good one kept in the fridge) bought from supermarkets as starter.
3. A yogurt maker (I like to use the type using hot water instead of electricity).

Method:
1. Use hot water to sterilise the container and the spoon.
2. Chill 2 cans of coconut milk overnight upfront so that it will be easier to scoop the cream out. Pour the can without chilled in the yogurt container, add the probiotic powder and mix them thoroughly. Open the chilled cans of coconut milk and only take the cream part and dispose the water. Mix the cream thoroughly in the container. Seal the cap and then put it in the yogurt maker which has already been added with hot water.
3. Let it ferment for 24-40 hours depends on the room temperature (24-30 hours for summer and 45 hours for winter). During winter time, it is required to change the hot water in the yogurt maker.
4. It takes about 28 hours to complete the fermentation process in summer when the room temperature is 30+C . when you take out the container from the yogurt maker, you will see the water at the bottom. Just stir it and mix it well with the cream above. Pour in glass container and put in the fridge to chill overnight. You can enjoy the yogurt in the next morning.
