I always recommend building a small library of flower books to students. These are beautiful. Roses and dahlias are the most difficult flowers to sculpt with palette knives and a detailed reference image is so helpful. If you’re a floral cake designer, let me know your favourite flower books.

The palette knife does most of the work. But for those tiny textured flower centres? A tea strainer and a little ganache is the best trick I know. 🌸

Even I questioned my judgement here, but I really believe that every order should take your business forward in some way and that once you have developed a style you should concentrate on growing and nurturing it. Random orders are just money.

I’d genuinely forgotten how chaotic piping buttercream can be 😅

Bowls, bags, colours… everywhere. Just for one tiny birthday cake.

This is exactly why I moved over to palette knife work.

Even after decorating a three tier wedding cake, there’s only a board and a handful of palette knives to throw in the dishy!

As someone who suffers with anxiety and OCD, I feel guilty all the time about everything but these are the hills I’ll die on. No one wants to buy a cake baked by me, or my interpretation of a Demon Hunters cake. If I can find a pic of the Ferrari cake I’ll show you.
