Hey everyone- hope your weekend is going well. It’s been an incredibly busy time in the bakery recently so next weekend I’ll be taking a break to regroup a bit!

Apart from the incredible support that my local community provides me (with great support and nice words - and buying breads!) I also am proud to be asked to be able to bring the bakery to small bespoke events. One of those events is at Benridge farm and Guerilla Pa it’s great to bring a bakery to a festival and a gig and the feedback has always been really positive. This weekend I went and bought a range of breads including four types of focaccia, sourdough brioche with a cream cheese and summer fruits filling, brownies and loaves for the camping crew. The vibe is always great, music good, people on point and organisers just really good people. Sold out
In other news I’ve been nominated for an award! Someone has put me forward for the ‘local awards’ prize (https://mylocalawards.co.uk/business/garden-room-bakery/) for the best bakery in the northeast! (there are some incredible bakers up here by the way.) would be great to get yer vote if possible.

In other news the garden is coming on a treat. It’s a great weekend to be able to get into it!

Hi everyone- hope all is well.

Another delightful week in the bakery, super pleased the garden is thriving too! This week’s breads have been revisiting the poppy seed and turmeric- 100% wholewheat sours and a new bread - cheese and marmite sourdough. A really authentic taste of deep marmite flavours with pockets of cheese a right tasty loaf - with a crunchy crust and super soft crumb. As well as these - early morning bakes of ciabatta and sourdough muffins….

Our garden is giving full early summer vibes- hawthorn, California lilac, clematis- early buds of fruits and the wisteria is always a proper showpiece of the early summer.

Today I went and popped to see my mates at the Old School Gallery with my beautiful wife, always great to hang out with my bestie! Had a spot of lunch Kooked North man it was good (the coronation cauliflower was a proper winner!) will def be back for more!

Hey everyone- hope you’re having a great weekend. It’s been a very busy weekend here - I’ve been trying to make new breads to tie in with my year of opening.
This week I made sun-dried tomato and feta. In addition to this I have been trying again with the Warkworth wild. I’ve increased the Rye flour and hydration to 78% (see pics below). Really pleased with them! The crust is chewy and flavourful the crumb chewy but airy.
The garden is growing into itself with tulips spring greens and blue skies(there is a pic of the back of the bakery). Swallows are back and blackbirds are many!
Going into next week I’ll be bringing a new flavour (look out on my website for update!) peace xx

And now I am ONE!

This week marks the bakery being a year old - I celebrated by putting cookies in every order - it’s been a blast so far and I have learned so much. It was really nice bumping into people picking up orders from Cabosse today, chatting about bread . The garden is starting to come into its own.

I hope you all had a nice Easter break.
This week marks my first birthday with the Bakery (Happy Birthday to the bakery!).
I have learned so much about bread! from responding to specific requests for specific breads and flavours to having feedback about good bread - bad bread (sorry about that) and fundamentally community. It was one of the things I really wanted to achieve from the outset, bringing people together with bread being the common denominator. I am often asked in the street how things are going ‘(how’s the bread ganin’ ) whether or not I have a shop yet (no - again, sorry about that).
I genuinely am grateful of all the support everyone has given me - from asking me how its going, purchasing products, leaving a nice comment, for Louise to allowing me to drop breads off for pick up and Karen at Seabanks oils who has provided me with ongoing guidance and oil! I also need to big up my crew, wife and kids for their mega patience and honest critique. I have really learned loads -

As part of my celebrations I thought it would be cool to provide a nice thing with every order next week. I have a cracking rye and dark chocolate cookie recipe and I will be adding these to every order next week. If you would like these and would like a vegan version just let me know. If you don’t want them again, just let me know, add a note to any order.
I will also be trying out some differing breads over the next few weekends, I will be adding these to the webpage as a special - so keep your eyes peeled. I have a sheeter lined up and hope to have that soon, it is requiring a lot of planning to get such a precision piece of equipment

Hope you’re all well - I have been CRAZY busy recently- I’ve not managed to get any posting done recently- still I’m sure that I won’t be missed that much. Still! Here are some pictures of recent bakes - I love a brownie here they adorned by mini eggs for that Easter vibe. (Can’t forget the hot cross buns)!
Some more sourdough pics including focaccia’s- olive and chilli and rosemary and sea salt - bagels and of course ciabatta!
