After taking some time out from cakes, its with sadness to inform you Cornelia's Cupcakes is now officially closed. I enjoyed the opportunity to create cakes for my wonderful clients over the last few years in their times of celebration, encouragement, sadness, whatever the occasion. It started all as a hobby to explore my passion to create, became very therapeutic when my dad past away and offer me opportunities to meet wonderful people along the way. But its time now to focus more on family life. I'm grateful for all the support I've received. I will still be admiring other cake maker's creations. Much love. Cornelia x

In honour of our dearest cake friend Claire Bowden from Darcy's Cupcake Creations, grateful if you could make this photo of her breast cancer collection your profile picture for tomorrow and wear an item of pink if you can. Her private cremation is in the morning in South Africa and at 12:30pm UK time a celebration of her life, during which all will also wear an item of pink - her favourite colour, signature colour of Darcy's and breast cancer awareness. Rip dearest Claire. You will be missed. Our thoughts and prayers go out to your family. Please keep sharing this note. Thank you all! ###

Yesterday the cake world lost a big inspiration and truly gifted beautiful lady. Rip Claire Bowden of Darcy's Cupcakes creations. You will be sadly missed by many my dear friend. Although I'm not baking at the moment, I couldn't say no to a client whom I've done babyshower cakes for. Her son has turned 1 now, last time he was in mummy's tummy!

5 Minute Cup of Chocolate Cake - thanks to my lovely sister-in-law I'm on a sugar rush-high now:

This is the most dangerous cake recipe in the world, as you are now only 5 minutes away from Chocolate Cake at any time of the day or night:
Ingredients:
4 tbsp flour
4 tbsp sugar
2 tbsp cocoa
1 egg
3 tbsp milk
3 tbsp oil
a small splash of vanilla extract
1 large coffee cup
3 tbsp chocolate chips (optional)

Method:
Add dry ingredients to cup and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla extract and mix again.

Put your cup in the microwave and cook for 3 minustes at 1000 watts (high). The cake might rise over the top of the cup depending on the size of the cup, but don't be alarmed! Allow to cool a little and tip out onto a plate if desired. (or use a spoon and eat of the cup as I just did).

Hello lovely cake lovers, I have been very quiet over the last few months whilst temporarily closed for building works and family visits. I have however decided to temporarily close a bit longer until the New Year - 3 kids, homework and activities are taking priorities at the moment. Happy baking all. x

Delivered my last cake for next 5 months yesterday, what a strange feeling. Just a reminder, I will be temporarily closed for building works and family visits until beginning of Sept.
