Nutty Figgy Mascarpone Cake…the flavours of this cake remind me of going out with my brother’s family🥰 and getting gelato during this season- IN THE COLD🥶
But the flavours available were usually something I’d imagine to have during the summer except one…wintery hot caramelised nuts with fig swirled within the mascarpone gelato all combined to give the most memorable winter taste for me, especially even during this season we would still have figs growing in the garden🪴 and make our own fig jam😋
And that’s exactly what this tastes like butttt as a cake! I was thinking of a muscovado sponge but it was too sweet, so have kept it simple with a light sponge with fig jam and caramelised nuts, filled with marscapone honey cream and coated in more of that delicious cream!!🍯
