✨Competition Winner!!!✨

Some of you might be aware that I recently won a competition with .cooking.queen.91 and ! The competition was to win a customised sign. when I entered, I never expected to win so I was suuuuper excited when I got the message to say that I had!

I wanted to start by telling you what a fantastic company are. After winning the competition they contacted me immediately to ask what I would like my customised sign to look like. I really wanted my logo, it’s something I designed myself and I’m very proud of it. They were confident they could replicate it for me. Within the week, it arrived at my door! I couldn’t believe the speed. But most importantly, they did my logo proud, the quality is outstanding, I was thrilled with the result!

The signs are made from 3mm Mild Steel, fully customisable , including colour (I chose black) and suitable for outside use!!.

(I wanted to share this a while ago but.. I am still waiting for my dear husband to get the sign up on the wall and I didn’t want to wait any longer! So for now it just looks awesome with a cake!). Thank you so much for my beautiful sign 🩷 I love it!

Gluten Free Brown Butter Biscoff Slice

Testing out the new gluten free ‘biscoff’ competition from Sainsbury’s.

If you’ve been gluten free for a while, you’ll be used to missing out on even the bare basics of what most people take for granted. They either don’t make a gluten free version, or they charge an extortionate amount for half the volume. But recently there’s been a few bits hitting the shelves. The only problem with most gluten free products is they also make them egg free, dairy free and basically everything free, that’s where I come in!

So this week, I’ve had a dabble with the new speculoos (caramelised spiced biscuits) from originally made universally popular by Biscoff. I previously tried their competitor but found them quite hard. Due to the suuuuper high temperatures this week and wanting to avoid the oven as much as possible, I thought I’d do a Rocky Road style tray bake. But not just any rocky road, oh no no no. This one is for grown ups. Toasted pecans and hazelnuts, spiced brown butter with huge chunks of those gorgeous biscuits.

Do you like Baklava? Then follow me 👇

I’m not going to focus too much on my bad week. However, trying to get a weeks worth of work into a few hours is quite tricky.. mistakes were made. But it’s what you do to recover that counts, right😬? Well I tested out a new recipe and I wasn’t so keen on the texture.
My go to, easy fix, is to mash it all up and make cake pops. Of course it’s extra work and extra ingredients but it’s better than throwing it all away and losing everything 😮‍💨.

These little fudgy balls taste like a bite of baklava heaven. Notes of orange, honey and toasted nuts. They’ve gone from zero to hero and I’d smash a whole tray of them!

If you don’t like lemon then look away now 🍋 Gluten Free Lemonie Crumbles 🍋

One of the first things I ever made for Stroud Farmers Market was my very own recipe for white chocolate lemon brownies (Lemonies).

Now this is where things get confusing because these aren’t a ‘Blondie’. These are made in the same way as a brownie (by melting white chocolate and butter together, instead of dark chocolate) whereas a Blondie, creams the butter and sugar together, more akin to a cookie base and tastes very much like a cookie. THESE taste like a fudgy lemon brownie, nothing like a cookie.

The original Lemonie was a simple no fuss, plain Jane, no nonsense kind of treat.. these are the Lemonie 2.0! Jazzed up to include a gorgeous lemon ganache and a slightly savoury crumble to keep you coming back for more!

Taco inspired gluten free pasties this weekend at Stroud Farmers Market 🌮🥟 !

For those of you who come to Stroud Farmers Market, you may have already seen that I do a variety of pasty flavours, on rotation. But this one is special!

I’ve recently been on an exceptionally boring diet, this lead me to ! He’s a local powerhouse (which makes this even cooler) who has developed a vast array of rubs and spice mixes. I started buying them to jazz up my mundane chicken and then realised that the options I had chosen were naturally gluten free! So many mixes in the supermarkets have random, pointless gluten in! I reached out to Mr Tubby Tom himself and he told me that they’re actually dedicating a page to gluten free items on his website. So I figured, I needed to make something for the market… and shout about it!! ..so here we are!

These Taco inspired Pasties are made with my own, gluten free recipe shortcrust pastry. They’re full of Mexican spiced, beans and veggies.. oh and cheese, don’t forget the cheese!
