Our Dessert of the Week has taken a little French/Italian inspiration, and it’s been a huge hit! 🇫🇷🇮🇹

Chef Bobby’s Sicilian Lemon Bavarois 🍋

A light and refreshing semifreddo bavarois served with salted caramelised walnuts, sorbetto al limone, and salted lemon meringue.

Finished with a generous helping of raspberry liqueur-soaked strawberries, raspberries and blueberries.

Garnished with crushed biscotti, freeze-dried raspberry, and fresh mint for the perfect balance of texture and flavour. 🍓🫐🍃

I really do sympathise with fellow bakers who make celebration sponge cakes! I’m making one as a favour for a friend and this tub of buttercream alone cost £15 to make and that’s just the ingredients not even the time & electricity it’s taken!

So when you are purchasing any cake please understand that nothing is cheaply made anymore and it costs a fortune and not to mention the time these celebration cakes take to bake and decorate & electric water and so on!

I’m so glad I do not offer celebration sponge cakes on my menu even tho I can do them, hats off to all bakers who do!

Back again for another year of birthday magic 🎂
From Orla’s 1st cake to now her 2nd - I’m calling this an official tradition now! We need to see a year-by-year timeline of cakes!😄
The heart of this cake was a vanilla sponge with a white chocolate ganache (but made pink, obviously!!)
