People ask me if I have been cooking a lot recently, the truth is I have eaten more beans on toast or jacket potatoes in last few weeks then I ever had in an years time ๐Ÿ˜‚. It's busy in the tax world, but you got to feed little bellies. This photo popped up in my Google memory to remind me I used to cook and shoot proper heartwarming meals ๐Ÿคค and now I am craving for this.

MASALA POTATO STUFFED PEPPER

Popularly known as bharva Shimla mirach in India. Another dish from my childhood days. I think every country has there version of stuffed peppers. Some stuff rice, quinoa or meat. My childhood version has spicy potato mixture stuffed in it and it's absolutely smashing.

For stuffing you need to boil potatoes. Add salt, red chilli powder, ajwain/carom seeds), mango powder (optional) and garam masala. Take out pepper stem and seeds. Stuff with masala potato mixture. Heat some olive oil in pan and shallow fry till pepper is charred from outside. Serve hot with chapati.

KANJI - a drink made from fermentation of black carrots
Every winter my mum used to make this delicious drink from just 4 basic ingredients as one of the main ingredient black carrot was only available during winters in India. Today if I talk to anyone about Kanji it's more of a forgotten drink unlike mango lassi and salty lassi.

This drink dates back to the time of undivided India.

To make 2.5 litres of this drink you need

2 black carrots cut lengthwise about 2-3 inches
2 tbsp mustard seeds crushed coarsely
1 tbsp red chilli powder
Salt to taste
2 litres of water

Just mix everything up in a glass container and leave it in sun for 3-4 hours in a day. Keep doing that for 4 days. Keep stirring occasionally. Once ready it's colour should deepen as shown in this picture. Taste to see if more salt or red chilli is needed. Just giving you a heads up it's not a drink for a fainthearted ๐Ÿ˜œ

My mum used to say we should drink it in the sun not more then one glass.

Happy Valentine's Day Instafam

Chia and berry pudding a healthy way to celebrate this and all other days.

For Chia pudding
6 tbsp of chia
1 1/2 cups of Almond milk or other milk of your choice
2 Tbsp honey or agave syrup

Mix all ingredients and leave them overnight.

Layer it with fruit, nuts and granola of your choice serve cold.

MOONG DAL AND PALAK CHILLA
aka lentil and spinach chreps served with tomato peanut chutney.

These savoury crepes are perfect for a valentine surprise breakfast. They bring so much colour to the table ๐ŸŒˆ and the fact they are protein rich they keep you fuller for longer ๐Ÿ’ช.

Perfectly crisp crepes can be made with a filling if your choice. I have used grated paneer but you can swap it with chopped onions, coriander and green chillies mix for a 100% breakfast.

My recipe

-1 cup moong Dal washed and soaked a night before (pic 2)
-3 cubes of frozen spinach or 1 cup chopped fresh spinach
-2 inch ginger piece
-2-3 green chillies
-1 tsp turmeric powder
-1 tsp ground cumin powder
-1/2 tsp red chilli powder
-water for the batter to get pouring consistency
-Salt to taste

Grind soaked Dal, ginger, green chillies, turmeric powder, chilli powder to a fine pure (pic 3 and 4). Add very little water at this stage just enough to facilitate grinding. Add frozen or fresh spinach and grind further (pic 5). Pour it in a bigger bowl add water, cumin powder and salt to taste. Leave the mixture for 20-25 minutes in a warm place for fermentation.

Heat a non-stick pan. Add batter spread it around like dosa (pic 7). Add Coconut oil on the sides and let it cook on medium high flame for few minutes till you see it has started to brown as in pic 8. Flip it over to cook on the other side. Then turn back and add grated paneer in the middle and turn in half. Serve with chutney if your choice.

HOMEMADE GARLIC OLIVE FOCACCIA BREAD SERVED WITH ROOT VEGETABLES AND POTATO SOUP.

To smash this combo we had homemade chilli garlic oil.

For meals like this key element is preparation.

-I made FOCACCIA BREAD Dough a night before.
-For soup wash and cut all vegetables a night before and place them in a food bag in fridge.
-Chilli oil can be made weeks in advance. It builds the flavour with time

ROAST RADISH, NEW POTATO AND PEPPERED MACKEREL SALAD

On a cold day what do you think of ?Me - what shall I eat that is warm but I don't gain another Kg ? ๐Ÿคฃ๐Ÿคฃ Food is always on my mind so stumbled upon this recipe which I guarantee is a feel good recipe. I have tweeted it a bit as I didn't had lambs lettuce so swapped it with Romanian lettuce which was supper delicious ๐Ÿ˜‹

You need

400 gms radishes whole
500 GM's new potatoes
5 tbsp olive oil
4 tbsp Greek yogurt
Juice of half lemon
2 garlic clot
2 Tbsp of dried dill (use fresh if you have I had dried only)
1 bunch of lettuce washed, dried and chopped
300 GM's of smoked mackerel
Pepper to taste
Spring onion greens (optional) they are not in original recipe but I had them so used it as I like it's flavour.

Heat fan oven . Roast radishes and halved potatoes for 30 minutes until golden.
In the meantime get the dressing ready using remaining ingredients except lettuce and MACKEREL.
Once veggies are roasted toss everything together and serve warm.

Wednesday and I am half way through my work storm. It's amazing how much you can do when you kids are at nursery/school ๐Ÿ˜œ.

Taco Tuesday - delicious black bean tacos with trimmings

It is one of those things the more you add the better they get โ˜บ๏ธ๐Ÿ˜‹. It's quite hard to click a loaded taco ๐ŸŒฎ but I tried my best, what do you say ?

Loaded my tacos with cheddar cheese, black beans mixed with red onions, green onions, pickled red cabbage, jalapenos and fresh coriander. For spices I have used cumin powder, garlic powder, onions salt, paprika and salt.
