Hi all, after much consideration I've decided to stop taking orders for cakes for the time being. Ive not been in great health recently and tried to push through it but I'm genuinely struggling. That said I have committed to doing wedding cake/cupcakes for later in the year and I will of course do those. For any Big Al's Sandwich Co customers, rest assured you will still see my cakes on the van. Just hard to commit to specific orders whilst I'm feeling like this.

Been a bit quiet lately I know, not been 100% following Christmas, but getting there! Currently baking brownies, much loved melt in the mouth brownies that our Big Al's Sandwich Co customers love! Smell in my kitchen is amazing! How do I get them so lovely and moist with my crispy top? It's all in the prep...First melt the chocolate and butter over a pan of boiling water (just a small amount of water, too high and if it hits the bottom of the bowl it'll burn the chocolate. Then whisk together the eggs and sugar till lusciously creamy, sieve the cocoa powder together with the flour and slowly fold it into the melted chocolate and butter along with the eggs and sugar. If you beat it you'll lose the air and it'll become dense.

Watch this space, Valentine's day is only round the corner...yes we've only just closed the door on Christmas, that wasn't thought out too well ha ha...but what could be more perfect than presenting your loved one with a bouquet that's both beautiful and edible? Had a bit of interest in the Stranger Things cake I posted and these two images popped up in my memories... A lovely young girl is celebrating her birthday over Christmas, so is treating her classmates to some reindeer cupcakes...the chocolate cupcakes in the smaller box are GF/DF/Vegan Friendly and Egg Free! New recipe I've come across and as a Coeliac I was able to test it first, and they were good!! Hope the birthday girl has an amazing day! I've got friends and family who celebrate their birthdays in December, so hope you all get double celebrations and are well and truly spoilt!

Hi all, hope you're having a great weekend! Some cakes I've made for family and friends in the past...I have said though, my focus now is on buttercream cakes rather than fondant, particularly novelty cakes as can take a lot of time to do so becomes quite expensive, but never say never...
