There’s something rather magical about baking live.

This Strawberry & Elderflower cake captured everything I love about a British summer…
the lightest fluffy sponge, layers of poached strawberry compote, fresh British strawberries, silky mascarpone cream and delicate floral elderflower in every bite.

But my favourite part?
Hearing your stories while I shared mine.

A rather posh Eton Mess. 🍓

Four layers of brown butter sponge filled with white chocolate mascarpone cream, fresh raspberries and silky Italian meringue, lightly scorched and caramelised until beautifully golden.

Nostalgic flavours… reimagined as an elegant celebration cake.

The sort of dessert that encourages people to stay at the table just a little bit longer.

There’s something rather lovely about cutting into a cake you’ve taken time over.

Soft vanilla sponge, strawberries, elderflower, mascarpone cream and layers built slowly by hand — made to be shared generously with family and friends around the table.

The quiet little pause after the first mouthful is always my favourite part. 🍓✨

This World Baking Day, the kitchen was filled with the scent of warm spices, toasted walnut praline, and freshly baked carrot cake layers waiting to be filled with orange mascarpone frosting.
