The carrot cake I made for Pierce Brosnan… and still one I return to.

Deeply spiced, beautifully moist, layered with cream cheese frosting and walnut praline for texture and contrast.

Finished simply, with hand-piped dahlia buttercream flowers and cape gooseberries — for brightness, balance, and a sculptural touch.

A reminder that even the most familiar bakes can be elevated with care, technique, and attention to detail.

🐣🍋 Triple Lemon Easter Cupcakes

Light lemon sponge, filled with silky lemon curd and finished with a swirl of lemon mascarpone frosting. Topped with pastel chocolate eggs, spring flowers and a little pistachio crunch — like tiny Easter nests.

Fresh, bright and full of lemon flavour, they’re one of my favourite bakes for spring.
