Figuring out if a cake is made by a human or AI is tough nowadays. I’m not against AI technology, which has helped fields like medicine and history.

However, in this instance, the cake industry, AI-generated images create unrealistic expectations and deceive viewers into thinking someone made a cake they didn’t. These images are generated without emotion or experience, and they’re harming the creative industry.

I focus on sharing genuine content – the real process, real creations, the process, the mess, the washing up and yes, imperfections too, because that’s the beauty of real cake made by humans.

A 1 day Christmas event from 11am to 3pm. To find out more about placing a pre-order for any of the bakes on da menu, drop me a PM (baking only a limited amount of each flavour).

All brownies and blondies will be individually packed best by date will be 27th December… perfect for gifting I’d say. Who’s a clever boy now 😂

And here he is… my Daffy Gremlin making his yearly appearance in the lead-up to Christmas.

Crafted from cake and sugar paste, this little guy remains one of my top illusion cake creations…and believe it or not, he’s still in pristine condition, stored in my basement workshop with all my past sugar craft projects and competition exhibits.

Launching not 1 but 2 new flavours this week at and …my Miso Sesame Brownies.

The complex layers of flavours of these brownies are rather unique… a fine balance between umami base and aromatic sesame, paired with Terra Rossa cocoa powder offering notes of cocoa, nuts, caramel, and cream resulting in a velvety textured brownie... speckled with roasted black/white sesame seeds… and bits of creamy white chocolate.

It’s rather impossible to describe the ‘weird wonderful flavour sensation’ of these brownies as described by those who have tasted it other than you’ve got to try it yourself.

You’ll find these South East Asian inspired brownies along with my Matcha Cranberry Blondies at (Old Street) and at (Euston).

What happened last night… mini bite sized Matcha Blondies supporting ’s catering event held in St Stephen Walbrook.

Crafted with organic matcha, Madagascar vanilla, and white chocolate, these blondies are creamy and silky smooth… with a drizzle of homemade matcha chocolate on their wafer thin crisp top.
