Yes to easy brunches like these while I enjoyed the last of my time off from work.

All you need is a lightly fried corn tortilla as base , topped with a fried egg and loads of pico de Gallo on top , avocado is optional but my favourite hot sauce is not !

Part 2 highlights 2025.
Even though I felt a bit beaten at times , I have so many things to be grateful for like my Lily turning 13 🥲 , and times like this I will treasure forever.

The bad times taught me to be resilient and listen to my inner voice a lot more , for this year I have a lot of wishes but mainly to just be happy and create more of what makes me happy .

Highlights of 2025 part 1.
2025 has taught me a lot , it has showed me to be humble and not take things for granted , to be grateful for having a lovely family and friends that at the end are all that matter .

It hasn’t been the greatest year at least not over the surface but I have learnt a lot and for that I’m very grateful and the people in my life , I do think that this year will bring a lot of change and I may be finally ready for it. Wish me luck ! Look forward to keep learning and trying new things always .

A little time of appreciation for the new recipe kits a lot of work, sweat and yes I confess sometimes tears went into developing these , but it was all worth it and feel very proud of the product we created , the cherry on top was to be nominated on New products and packaging awards in the best meal kit category , we didn’t win the gold this time but there is always a next !
Anyway if you see these around I totally recommend them , they are made with the best ingredients and every little detail has been considered for you to have a lovely meal at home , did I mentioned that is ready in 15 min ! 🔥😊

Let’s start December with the right attitude !

Is December!!! And let’s face it unless you are a kid , it means a lot of work and many commitments and responsibilities , a lot of cooking and a lot of people to make happy 😅 so I’m fueling myself with nourishing and warming food to get me to the finish line .

Caldo tlalpeno comes to the rescue , super nourishing and warming Mexican soup ! The broth is enriched with Chipotle paste for delicious smoky flavour 🔥 mixed with shredded chicken, veggies and chickpeas to make it even more filling and delicious , serve it with cooked with rice , halloumi cheese or feta , avocado slices and lime .

If you also need a little energy to get you through the holiday season , stay tuned this recipe is coming to my substack this week !!

Very proud moment to appear in a Mexican publication showcasing my cookbook Sobremesa after an unforgettable experience at the Sharjah book fair in Dubai, thank you to and J. Francisco de Anda for the interview and your thoughtful questions 🙏

It has been more than a year since the publication of my book and it feels like I’m closing circles , very grateful for the opportunities that life has thrown my way , and feeling very very proud of my book now more than ever !!!

My intention has always been to celebrate simple recipes and easy ways to invite people to cook Mexican food , like opening a little door into our food and culture. Hope I have achieved that even in a small way !
