Our first permanent Bakery shop!

Following those two delightful pop-ups, in snowy Old Street and sunny Bermondsey Street, a gratifying cacophony of cries went up for MORE MORE MORE! And since we like to contribute to the happiness of our fine city we viewed it as our civic duty to start looking for a permanent site. Our counter will be laden with those famous doughnuts, delivered twice daily by our Bermonsdey bakers to ensure pil

lowy freshness at both elevenses and that teatime pick-me-up! And as well as morning pastries and afternoon Eccles there will be much-loved sourdoughs, raisin loaves and rye loaves to be whisked away for office lunches, or for those heading home to the supper table. We are always proud to be rooted firmly in our local communities and here is no exception: in Neal's Yard and Seven Dials we are surrounded by a host of happy companions. Soon you can pick up your Eccles Cakes, then pop around the corner to our long-time friend Neal’s Yard Dairy for that accompanying Lancashire Cheese! Sourdough for your morning toast, then over the road to Monmouth Coffee for your cafetiere! And watch this space - with our off-sales license pending, we will shortly be selling our St. JOHN Wines too. Breads, bottles and treats from us, cheeses and coffee from our friends. All your needs entirely met, with just a few steps between them.

On a well-set table, bread is as essential as your knife and fork. It is fundamental. As a fundamental, it must be good - and that goodness must be protected. This week we support Real Bread Week. It sheds a light on the joy and importance of genuine sourdough which, at its simplest, is made using just three ingredients: flour, water and salt. We add a fourth ingredient, which most industrial bakers don’t. That ingredient is time. It is only time that develops a depth of flavour and goodness. We proudly show our seal of approval on our bakery bags attesting that we are passionate bread makers!

Yes, nowadays we have pallid, cold chain strawberries in December and flight-weary blueberries in January. There are anonymous identikit tomatoes all year round and Christmas decorations as soon as the leaves begin to turn.

How these unseasonable appearances dampen our pleasure when the true season arrives, how much greater our joy when sharpened by anticipation.

And so, at last, our Hot Cross Buns are here. From today you will find these richly spiced, fruit-studded delights on all our counters, both bakeries and restaurants. Purists would even say they are a little early. Commercial titans would say they are ridiculously late. For us, they are perfect.

On a well-set table, bread is as essential as your knife and fork. It is fundamental. As a fundamental, it must be good. And that goodness must be protected. We are avid supporters of the Real Bread Campaign, whose Real Bread Week kicked off on Saturday.

The lack of regulation and the power of big food corporations means that the term is under-regulated, allowing for loaves to be called sourdough when they also contain a large number of other raising agents, preservatives and more. The Real Bread Campaign supports independent local bakeries to provide their communities with nutritionally sound, genuine sourdough loaves. The seal of approval on our bakery bags confirms what Trevor attests: that we are passionate makers of genuine sourdough, which you can find to buy at our three bakeries and at our three restaurants.

“An Eccles cake without some cheese is like a kiss without a squeeze”. We have heard that some people, in the privacy of their own homes, eat our Eccles cakes hot with ice cream. We do not judge you. Once the cakes are purchased from our bakery counters they are yours to do with as you will. Enjoyment of Eccles cakes, just like enjoyment of kisses and squeezes, is a personal matter.

But for us, our pleasure lies in a slice of Mrs Kirkham’s Lancashire Cheese - the perfect savoury crumbling companion for the dense dark sweetness of the Eccles cake. A sensual delight.

“Pillows of joy” exclaims Fergus, licking sugar off his lips. “A glass?” asks Trevor, the question ever on his lips. We have both at our bakeries. Pillowy doughnuts, heavy with bountiful fillings, and gleaming rows of wines to fill your glasses.

A quick note to say that our Druid Street bakery arch will be closed this weekend (August 30th & 31st) as our builders fill the space with glorious new equipment to make our bakers' lives better and our breads and pastries more delicious.

But never fear - our other bakery shops are open as usual. St. JOHN Borough Corner is a mere hop and skip away, and St. JOHN Neal's Yard is waiting for you too. You will have your doughnuts - just not at Druid Street. Reopening next Friday, Saturday and Sunday as usual.

We are opening a new restaurant: St. JOHN Marylebone. In September our doors will be flung open wide to serve the needs and desires of locals, and those who travel for a pilgrimage to St. JOHN.

Trevor and Fergus’ vision is clear: "Inspired by the local bars of Paris or Florence, which are all things to all people at all moments through every day - coffee and wine, toast and three-course meals, babies, lovers and bankers. Each St. JOHN sings with its own voice, dictated by the environment and community in which it finds itself. This new addition to the family will provide a rolling feast of many parts, with ample good wine as you would expect”.

And St. JOHN Wines are at the very heart of the matter. Those bountiful bottles which are so central to what we do will, at St. JOHN Marylebone, be the driving force of the menus and the rhythms of the day. Good things will appear on the blackboards for breakfast, lunch and dinner, inspired by the classic St. JOHN repertoire but with touches all its own, and nods to culinary luxuries that Fergus so enjoys - a touch of caviar, perhaps? “Cheeky”, says the man himself.

As our diners and drinkers sip and nibble excellent things, sitting at the zinc bar bathed in the light from the high arched windows, they will feel that very particular sense of excited calm that St. JOHN imparts. A wellbeing, a feeling of being home. Our new home in Marylebone.

Londoners have the tube map etched into their bones. The signs to ignore, the shortest interchanges, the right doors for the right stations, the proximity of exits to sustenance.

Line closures mean not only the inconvenience of channeling a new groove for your habitual routes, but maybe the loss of your favourite breakfast, or lunch.

Those of you who work near Borough Station will rejoice in the reopening of its little stretch of the Northern Line. St. JOHN Bakery Borough Corner has coffee and doughnuts for breakfast, those doorstep sandwiches at lunch, bottles of wine and loaves for the table on your way home.

"Creating a sandwich is like jazz", says Fergus. "You must find your unique sound". Fergus always orders the Egg Mayonnaise sandwich from the chalkboard bar menu, and requests the addition of brown shrimp, or anchovy. The perks of being the boss.
