The Sweet Loafer GF baking that doesn't always pass the beauty test.

I bake my own bread and cake because I have coeliac disease and shop-bought gf food is so expensive. Here are some of my attempts.

GF banana cake.
I put three soft bananas in then added a little more SR flour to hold it up. So the cake was bigger but so bouncy. I added vanilla essence.

This loaf was heavier dough.I put in flaxseed and linseed. It had a crunchy outer. Tasted delicious.

Loaves of bread baked in the bread maker smell so delicious and taste lovely but get hard within 24 hours. But I toast it and it tastes great again with plum jam.

I’m so glad I’m back doing my bread. Much cheaper than shop bought and hopefully healthier.

This one tasted wonderful. I put mixed seeds in it.
It does look like it wants to go and crawl back under the rock it came from.

Not that you’d recognise it.

I can't even follow a simple activity.

This was a GF vegan loaf with seeds, broken pecans, sliced green olives. Vegan egg-replacer: Orgran.
It came out rather doughy, I'm not sure why.
Perhaps the egg-replacer, perhaps the olives released their oil.
Any suggestions welcome.
The pecans were a bit spiky.
Nevertheless, my vegan friend ate half a loaf (still warm) - but said it was nicer once it had cooled down.
