What’s the difference between Charlie and a charcoal barbecue? They both use charcoal, but Charlie is built to cook like an oven too. Its insulation and sealed door hold the heat inside, while the air vents let you control the temperature. Cook low and slow for smoking, turn up the heat for roasting and baking, or go hotter for pizza. You can grill directly over the charcoal too. With space to cook on several levels, there’s room for the roast, potatoes and vegetables together. Neil explains what makes the difference.

This is a bit of a showstopper, but remarkably easy to make. Soft, buttery brioche baked around a whole ripe Camembert, studded with garlic and rosemary, until the bread is golden and the cheese is molten. We served ours with fresh figs, Parma ham and a big green salad. Tear off the warm brioche and dip it straight into the Camembert. Then, when you’ve made a good dent in the cheese, pile the salad into the middle with a sharp lemony dressing to cut through all that richness. The full recipe is on our website. And save the brioche dough recipe while you’re there. It makes rather good brioche burger buns too.

When you go for it, you might as well go for the full Monty.

Meet Andy and Julie from Guernsey, two of our original Charlie customers, who have been with us since we launched back in 2022.

Their first Charlie was a Porcini Oven, which is still very much part of the family. This year they’ve gone all in with our new outdoor kitchen in Blue Marlin. One of everything, with plenty of room for cooking, prepping and feeding a crowd.

We’ve been lucky enough to get to know them properly along the way. This year they joined Mark O’Brien for one of our American BBQ masterclasses and then came down to Cornwall for our Charlie retreat. They love to cook, love having people over and have a big family to feed, so this kitchen feels very much at home.

And Blue Marlin against that Guernsey sky looks rather fabulous.

Thank you, Andy and Julie, for being such a wonderful part of Charlie from the early days, and for so generously sharing these gorgeous photos with us. We hope there are many long lunches, big family dinners and very good parties around that kitchen.

Great burgers cooked in the Charlie Oven.

Good quality steak mince, a little seasoning, shaped into patties and straight onto a hot grill over the charcoal.

That’s it. Restaurant quality burgers at home, ready in minutes.

They didn’t last long.

Fat on your patio? No thanks.

The Charlie drip tray catches drips as you pull racks in and out, keeping the front of your oven and the floor below clean.

It simply lifts off for easy cleaning.

Small detail. Big difference. A must have Charlie accessory.
