Stollen bite recipe...
It is all about Christmas baking here at GF Jack GQ! From ruff puff pastry to chocolate orange yule logs, it's all go and smelling wonderful!
A big favourite are stollen bites, nothing gets more Chrismasy at our house than a big jar of them on the table for everyone to munch on. Even though I sell them, in the spirit of sharing at Christmas time, here is the very simple recipe for scrumptious yuletide stollen bites to bake yourself at home...enjoy!
(based on the wonderful Becky Excell recipe)
340g gluten-free self raising flour
1/4tsp xanthan gum
1tsp gluten-free baking powder
85g butter very cold and chopped (I use Flora plant butter to make it dairy free)
60g caster sugar
50g ground almonds
150g grated marzipan
100g dried fruit
1 large egg
150ml milk (dairy-free is ok if needed)
3tsp lemon juice
zest of 1 lemon or orange (optional)
Icing sugar for dusting
Preheat your oven to 200C Fan / 220C. Prepare a baking sheet with baking paper.
Pop your gluten free self raising flour, baking powder and xanthan gum in a big bowl. Chop your cold butter into smallish cubes and chuck it in with the flour. Rub it in with your fingers till it forms what looks like breadcrumbs. The butter needs to be cold for this to work properly.
Stir in your caster sugar, ground almonds, grated marzipan and dried fruit plus the citrus zest if you're choosing to use it ( it does up the game!)
Warm the milk in a jug in a microwave for a few seconds, you just need it lukewarm). Add your lemon juice and allow to stand for 1-2 minutes – it becomes 'buttermilk' when it curdles.
Add your egg to your ‘buttermilk’ and mix it with a fork to combine them..
Make a well in the middle of your dry mixture and pour in the milk/egg mixture, working it in using a metal fork or knife. Keep working it till it forms a dough (it might be a little sticky/soft).
Dust your hands in a little flour and your work surface. Take a doughball sized amount of your mix and roll it into slightly flattened balls (not really flattened as they spread a little in the oven). Place these on your prepared tray with gaps between each.
Bake in your preheated oven for 12-15 minutes until golden.
Remove from the oven and allow to cool briefly on the tray before transferring to a cooking rack.
Dust heavily with icing sugar and enjoy cold or slightly warm if you can’t wait!
These stollen bites keep for 3-4 days in an airtight container or can be frozen for up to 3 months. If you freeze raw dough balls, defrost before cooking
