Did you know everyday around 12 noon our bakers deliver a warm batch of “Dark Crusted” Wild English Sourdough to our cafe shop. In France it is common practice to ask your local artisan baker for your bread to be “Bien Cuit” meaning well baked.

A more intense nutty and crunchier crust makes the soft sourdough crumb taste a little sweeter and the sourness brighter. Without going full nerd mode this is called the “Maillard reaction” where the extra heat transforms amino acids and reduces sugars into hundreds of aromatic compounds which is what end up on your taste buds.
