🍕 Keto Fat Head Pizza With Salami, Olives & Rocket
Ingredients (1 large pizza / 2 medium)**
Fat Head Dough
1 ½ cups (170g) shredded mozzarella
2 tbsp cream cheese
1 large egg
¾ cup (90g) almond flour
½ tsp garlic powder
½ tsp salt
Optional: ½ tsp Italian herbs
Toppings
* 2–3 tbsp sugar-free pizza sauce (or crushed tomatoes seasoned with oregano) used tomatoe puree with little olive oil, garlic powder and hint of stevia mix.
* ½ cup shredded mozzarella i used mild cheddar
* 6–8 slices salami
* 6–8 sundried tomato pieces (drained and sliced)
* ¼ cup black or green olives, sliced
* To finish: a handful of fresh rocket (arugula)
* Optional: drizzle of olive oil or balsamic glaze (keto option: olive oil + lemon)

Instructions
1. Make the Fat Head Dough
1. Preheat oven to **220°C / 425°F**. Line a baking tray with parchment.
2. In a microwave-safe bowl, melt **mozzarella + cream cheese** together (about 60–90 sec), stirring halfway.
3. Stir in the **egg**, then add **almond flour, salt, garlic powder, herbs**.
4. Mix until it forms a dough. If sticky, knead with wet hands or chill 5 minutes.
Or roll between parchment paper
5. Shape into a **thin pizza base** (around ¼ inch thick).
2. Pre-bake the Crust
1. Bake for **8–10 minutes** until lightly golden.
2. Flip the crust and bake **2 more minutes** for extra crispness.
3. Add Toppings
1. Spread a thin layer of sauce.
2. Add the mozzarella, salami, olives, and sundried tomatoes.
4. Bake
* Return to oven for **6–8 minutes**, until cheese bubbles and edges crisp.
5. Finish
* Top with **fresh rocket**.
* Optional: drizzle a little good olive oil
