So as I’ve said before, the MOST important thing when collecting your cake is to get that air conditioning on in your vehicle before the cake goes in — nice and cool is exactly what we want for transporting cakes safely!

Next up — keep the cake out of direct sunlight.

Place the cake in the boot (just like I mentioned in a previous reel) and pull the parcel shelf over so the sun isn’t shining directly onto it.

If you’ve got a longer journey home, try not to stop for too long without leaving the air conditioning running. Cars heat up incredibly quickly — even when parked in the shade!

Why spend good money on a beautifully decorated cake only for it to melt in the car before the celebration? It’s the same as buying a gorgeous dress or suit and ruining it with paint or bleach before the event!

Basically… treat cakes in cars like you would a baby 😂
(Obviously don’t cuddle or kiss your cake though lol)

Cake never needs to go to waste.
If you happen to have some left after the celebrations, you can freeze it and enjoy it another day.

Simply portion your cake into slices and place them in a freezer-proof container lined with greaseproof paper. Add a sheet between each layer so you can easily take out just the amount you need.

Perfect for those sunny afternoons in the garden listening to the birds sing.
Or when unexpected guests pop by and you have a little treat ready to serve.

A freezer stash of cake is always a good idea !

Cake portioning tips

Before choosing your cake design, it’s important to think about how you’d like your cake served.

Start by deciding on portion size:
• Finger portions — approximately 1” x 1”
• Dessert portions — approximately 2” x 1”

If you’d like evenly sized, symmetrical slices, square or rectangular cakes are the best option as they allow for consistent cutting throughout.

With round, oval, or heart-shaped cakes, some portions will naturally vary in shape and size. Edge pieces may contain more icing or decoration due to the curved design.

For the cleanest finish when serving, wipe your knife between every cut. This helps create sharp, neat slices and keeps the cake looking its best while serving

I love my job — every cake is different, and today’s design is no exception! It’s actually something I’ve never been asked to create before, which makes it even more interesting.

When the phone rings or a new email pops into my inbox, you never quite know what the next request will be — and that’s one of the things I love most about what I do.

Please DON’T put your decorated cake in the fridge!

If your cake is covered in sugarpaste and decorated with sugar flowers, models, royal icing piping, or lots of colours, storing it in the fridge can ruin all that beautiful detail.

When a cold cake is taken into a warm room, moisture in the air condenses on the surface. This can cause:
• Sticky icing
• Wilted sugar flowers
• Colours to run
• Softened or damaged models

After investing in a beautifully designed cake, you don’t want all that hard work spoiled before your event.

Instead, keep your cake boxed in a cool room, away from moisture, direct sunlight, radiators, or fires.

AFTER THE EVENT
If you have cake left over:
• Remove any sugar flowers or models
• Store the cake in the fridge in its box
• Or portion it up and freeze for another day to enjoy with a cuppa ☕️

The icing may look wet and colours can run once refrigerated/ frozen but the cake will still be perfectly fine to eat.

⚠️ Cakes containing fresh cream, cream cheese, or custard fillings MUST be refrigerated. These cakes usually won’t have sugar flowers or decorative models on them.

If you’re ever unsure, always ask your cake maker for storage advice.

Did you know sugar is a powerful ingredient in the kitchen?

When it’s used for preserving — like in jam making — it works a bit like osmosis. It attracts and holds onto water from the fruit, reducing the “spare” water that bacteria and mould need to grow. That’s what helps stop your jam from going off.

But for cake makers… this isn’t always a good thing!

All will be revealed next week.
