Special Celebrations

This week we celebrated our Mums 60th birthday 💗
An unusual, quiet, intimate yet grateful celebration.

The cake, a simple vanilla sponge, with jam and buttercream. Decorated with some vibrant fresh pink flowers and yummy strawberries drizzled with a little chocolate.

The celebration although unusual was a filled with gratitude, that we were all safe, well and healthy and even able to celebrate in small way. So appreciative of all we have during this difficult time and sending lots of love and strength to anyone that needs it ❤

**CHOCOLATE OVERLOAD**

Such a pleasure and honour to make a birthday cake for one of my teachers, Shaheen Chino Khan ji. Her request was simply 'lots of chocolate' 😊
Made a chocolate sponge, 3 layer cake with a chocolate cream flowing thru, covered in roasted hazelnuts and topped with Ferrero Rochers 😋. The cake was accompanied by 130 vanilla and chocolate cupcakes.

F U D G Y S Q U A R E S
That's not their official name but its what I'm calling them! Used this recipe from and it worked out perfectly! Adapted slightly by adding some cinnamon and ginger to the base, omitted the coconut and added pistachios on the top for a decorative touch 😊
It's the perfect balance of sweet and chocolate AND it's vegan. When I rave about vegan, in my head I think it translates to zero calories ha ha ha .
