Congratulations to Sara and Richard on your stunning wedding last weekend at . . This wedding cake was an absolute pleasure to make with hand made sugar flowers of scabious, roses, cosmos and rudbeckias with a hand painted design and gold leaf. The whole design was inspired by the beautiful wedding stationary chosen by Sara and Richard from Norma & Dorothy. Wishing them both a lifetime of happiness together!

Congratulations to Z & D on their beautiful and incredibly personal wedding at .tower yesterday. This semi-naked beauty reflected the rustic and natural feel of their day using stunning wax flowers & eryngium thistles supplied by as well as rosemary and thyme from my very own herb garden to accent the style created by only partially coating the cake in deliciously smooth Swiss meringue buttercream. With one tier of scrumptious carrot cake and one tier of chocolatey cacao nib sponge I would have had a difficult time choosing between the two!! Wishing you both happiness, joy and love on your wedding day and for all the days ahead.

I’ve had a fantastic day meeting lots of wonderful couples to hear all about their wedding plans and the way they visualise their wedding days. I can’t wait to get started on all the designs for their beautiful cakes.
Here’s a little glimpse of the wedding cake sample boxes I offer to all my wedding couples. Todays boxes included a Honey and Thyme Cake, a Cacao Nib Sponge, a Salted Caramel Sticky Toffee Cake, a Vanilla Bean Sponge, a Lemon and Poppyseed Sponge and my own personal favourite, Carrot Cake.

This Summer I got the chance to create a cake that was a play on a fudge cake crossed with a fondant on behalf of a customer from all the way in Barcelona!! My take on the brief was to create a cake slice layered with chocolate sponge, white chocolate ganache, chocolate truffle and a white chocolate shortbread base all topped with tempered chocolates filled with runny fudge, meringue kisses and a decadent touch of edible gold leaf.

I’m busy working on my gilded bumblebee range for little cake lovers to enjoy but I wanted to take the chance to introduce this beautiful ombré dusk pink cake that I created a few weeks ago. Decorated with an intricately delicate stencil and finished with hand made sugar spray roses it now resides in my studio brightening up my day every time I’m working. Although I have to admit sometimes I wish it was edible!

A brilliant and fun recent commission for a Rolling Stones and Rod Stewart fan! This bespoke cake was my personal favourite of my heather honey and thyme sponge, coated in a delicious, smooth white chocolate ganache, with hand made tempered chocolate spheres, tartan shards, hand painted design and most importantly the famous Rolling Stones lips. The photos show the design stages from the initial sketch, to the completed cake and the packaged presentation. A bespoke design I loved every minute of creating!!

This beautiful heather honey comes from the Edinburgh Honey Co who have aviaries as locally as North Berwick and Fife and the thyme has travelled all the way from my very own garden.
