So this is long overdue but it’s taken me a while to actually get to grips with my decision. Many will already know this but I made the difficult decision to close Strictly Sourdough Bakery back in July. It was not easy, I was very busy and was enjoying seeing my bread in local shops and restaurants, there were lots of lovely compliments and I really felt that I was really in my bread making stride. The sad reality was that I was working 60+ hours a week, had more work than I could cope with but without the ability to expand I could not make enough money. 18months ago we began a huge building project at home which would have given me a dedicated space to work from but this all came to a grinding halt when a border dispute kicked off. Now a year and a half later the dispute is ongoing and shows no sign of being resolved anytime soon. So no space to grow into and no money to look at alternatives. With the bakery equipment taking up half the kitchen and our outside space completely ruined we had begun to feel that we wanted our space, time and a little financial security back. So the decision was made. I would like to thank every single person who bought a loaf with out you I would not have been able to continue for so long. To those who took the time to email me to order loaves or to let me know you loved my bread every single email was massively appreciated and made the long hours and early starts much more bearable. To those local companies , .glastonbury (Cobbs) thank you for taking a chance on a little baker from Glastonbury, thank you for supporting me through thick and thin, I loved every minute and was so very proud to supply your businesses. Happy belated Easter! I just thought I would drop a quick note to say that I am taking a very short break to enjoy spending time with my remaining fingers! It’s been a crazy busy few weeks and at times I have felt slightly like I’ve become nocturnal but the light is returning and that always makes this feel better and hopefully a rest will help me to stop injuring myself. There will be no delivery on Tuesday (2nd) but normal deliveries will resume on Friday. I hope the Easter bunny delivered some delicious treats and like me you are sat on your sofa in your pjs wondering when you will find out how much chocolate is too much chocolate!

Yesterday we baked! (Again) this time it was Luna’s choice and she wanted to make some Easter cupcakes. I found the bunny bum marshmallows as putting those on was a distraction from what she really envisioned which was a semi realistic grass, nest and egg design (damn you YouTube for giving kids unrealistic expectations of cake decorating) we were in danger of a “Nailed-it” type moment. So a gentle reigning in was needed and we opted for a chocolate cupcake and greenish white chocolate cream cheese buttercream. Luna’s first go at piping buttercream went without incident (a definite achievement for doing anything with Luna the whirlwind). Happy Luna and delicious cakes all round! She even washed up ❤️

It’s that time of year! And I can’t put it off any longer. Hot Cross buns- butter and milk enriched yeasted sourdough bun filled with tea soaked fruit, spices, and mixed peel. This golden beauty is a milk kefir loaf. A new loaf recipe for me and for the first go I am really pleased with this. Milk in a loaf will soften the crumb, add to that a little butter and you have a beautiful soft loaf with a golden crust perfect for hearty sandwiches or crisp toast. The milk kefir comes fresh from the milkman every week and is creamy, a little sour and totally delicious, it brings a delicate tang to the loaf making it very moreish. A little tweaking and this loaf will be available soon!

New cookie flavours in development! One of the more onerous tasks is having to taste them. At the top we have Caramelised Honey and Tahini- sweet, nutty, salty and very moreish. At the bottom we have funfetti birthday cake cookies- with caramelised white chocolate and white chocolate chips- tastes just like a birthday cake! Samples will be going out tomorrow and hopefully they will be available soon.

We have been doing some important science this week on the new burger buns. Filling to bun ratios, squish and disintegrate factor and most important flavour.
Early findings indicate that these buns can stand up to egg and bacon, chicken, salad and pickles sandwich and a basic chicken burger like champs. And they taste good too. Made with just sourdough, flour, eggs, honey, salt water and yeast, they are a soft bun with no hidden nasties. Ready for wholesale and retail orders from the 20th Feb.

Developing a new product this week to try and stave off the winter blues. This is Wayne Caddy’s chalabun recipe from the Knead For Peace book, it’s a delicious soft brioche like bun perfect for all types of burgers, breakfast baps and just eating because the flavour is so good! The bun lends itself also to a version of a bialys - a polish bread usually filled with onion and poppyseeds. Here I have filled one with tallegio and a mushroom and truffle paste, and one has Roquefort, walnuts and a drizzle of hot honey. As you can see I tried 2 different techniques for filling the buns and 1 definitely works better than the other. These buns will be available to order after half term (and after a bit more practice). Fillings will vary and may include pizza style filling, goats cheese and onion, pulled pork, bacon and Brie just to name a few!

Dreaming of the delicious cheese straws the and I made back in the summer! COMING VERY SOON! - once we have rearranged the house - The Weekend Croissant Club!
If you too dream of crispy, buttery, pastry goodness then watch this space because I will be starting a small production of croissants by the end of February that will be available to buy on a Friday afternoon or Saturday morning and collect direct from me! Today is the turn of the lovely, usually reliable, Not-Strictly-Brown yeasted loaf to misbehave. It seems that I rushed the first stage and as a result I now have these ugly betty’s to try and slice ready for delivery later. But having tested one for my breakfast I can confirm that underneath the lumps and bumps is the usual tasty brown loaf perfect for toast and sandwiches. Made with only flour, fresh yeast, salt and water it is most definitely real bread.
