Batch cooked banana pancakes (no added sugar!) 🥞

I had overripe bananas and a family sick of banana bread so I decided to change it up and batch cook a large batch of pancakes for the chillier mornings!

This recipe makes 12 but I doubled mine and made 24 as I had 4 bananas that would’ve went to waste 🫶🏻

350g self raising flour
Big pinch of salt
2 overripe bananas (add another if the bananas are small)
2 medium eggs
250ml of milk of choice
Vanilla extract to taste

-Add the flour and salt into a large bowl
-in another bowl, mash the bananas then add the eggs and mix. Once mixed add the milk and vanilla extract and mix again.
-pour the wet mixture into the dry and give it a good mix (this mixture is thick!)

-add a dash of oil into a non stick pan and bring it to a medium heat.
-once the pan has heated get 1/4 cup (or 2-3 tbsp) of the mixture and pour it into the pan.
-once you start to see bubbles on the surface it’s ready to flip to the other side! Cook for 1-2 minutes.
-repeat this until the batter has finished.

-let them cool fully before freezing. You can freeze in individual bags or in a lunchbox with a piece of parchment between each pancake to prevent them sticking together.
-To reheat, simply take one from the freezer and heat in the microwave in 30s intervals, or reheat in the toaster, or on a frying pan medium heat! These will last 2 months once frozen 🫶🏻🫶🏻
