This weekend I baked a very special cake for my stepdaughter’s 18th birthday. It’s a vanilla bean sponge layered with homemade bramble jelly and finished with white chocolate ganache. The bramble jelly is made from fruit we picked this summer, which makes it feel even more meaningful.
Hard to believe that the little 6-year-old I first met riding her Hello Kitty scooter is now celebrating this milestone birthday. Watching her grow into the young woman she is today has been such a privilege, and I’m so glad I could mark the occasion with something handmade and filled with love.
