Skinny Banana Loaf 🍌
My go to banana bread recipe:
4 bananas , 1 for decoration MASH the rest!
1 large egg
1 Tablespoon vanilla extract
3 Tablespoons light brown sugar
2 Tablespoons granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
200g Self raising flour
2 Tablespoons unsalted butter (melted)
• Grease a standard 9x5'' loaf pan loaf tin!
• Mash bananas in a mixing bowl. Add egg, vanilla, brown sugar, granulated sugar, and cinnamon and stir well to combine.
• In a separate small bowl stir together flour, baking powder, baking soda and salt. Add to banana mixture and stir to combine.
• Stir in melted butter. Add to your loaf tin and top with your remaining sliced banana. Bake at 180 for 35 minutes or until a toothpick inserted comes out clean!
Slice and enjoy!
(I love to toast mine with some butter) 😍
Serves 12 @ just 137cals a slice!
