🍞 Fun bread facts for a rainy Thursday! 🍞

* Sourdough can take 24+ hours to make — long fermentation is a big part of the flavour.
* The holes in sourdough are called the crumb structure. The bigger the holes, the more open the crumb.
* Sourdough is one of the oldest forms of leavened bread and was being made long before modern commercial yeast.
* The smell of freshly baked bread is partly a chemical reaction called the Maillard reaction — it creates loads of the flavours and aromas we associate with a golden crust.
* You can freeze sourdough — slice it first and you can take out individual slices whenever you need them.
* Different flours make different breads. Spelt, wholemeal, rye and wheat all behave differently because of their protein, fibre and mineral content.
* Salt does more than add flavour. It also helps control fermentation and strengthens the dough.
* The crust and the crumb are basically the same dough — but heat and moisture transform the outside into that delicious crisp crust.

No, I’m not burnt. I’m beautifully caramelised
Please don’t put me in the fridge
