SICILIAN LEMON CURD CAKE* The three layers of delicate lemon infused cake is filled with ganache base lemon curd with velvety lemon buttercream . Each slice is a taste of sunshine, perfect balance of tangy and not to sweet, this is a true celebration of the Mediterranean flavours. TO FINISH IT OFF, I USE MY OWN DEHYDRATED SICILIAN LEMON SLICE.
STRAWBERRY CHAMPAGNE CAKE* As you savour each bite, my velvety cake sponge is filled with strawberry jam ( if in season, I use our own English strawberry because they’re the best!) PASSION FRUIT COCONUT AND MANGO CAKE* Being Asian this cake acts in behalf of me. I cant express enough how I love this cake combination. It may seem in one cake there’s is a lot going on, but I promise the three exotic fruits compliment each other. The moist sponge had a touch of coconut flavour. Filled with my signature buttercream with mango bits and the star of the show is my passion fruit filling. To add a delightful crunch and charm I finish it off with coconut shavings.

SALTED CARAMEL* As a baker, we all have a recipe close to our heart, and this creation is close to me. I create this cake to join all three sponges, my chocolate dream cake, vanilla and my caramel cake. Each cake is filled with balance of homemade caramel sweetness and a hint of sea salt flakes. This cake doesn’t get better than this.
