When our good friend announced he was getting married, we were delighted to hear the news. Then we were asked to make the wedding cake, which we were honoured to do so. The bottom tier is layers of lemon Madeira sponge, homemade lemon curd and vanilla Italian meringue buttercream. The middle tier is layers of chocolate vanilla marble cake, with chocolate and vanilla buttercream. The top tier is layers of spiced carrot cake, with vanilla buttercream. We then coated the tiers in white chocolate ganache. The top 2 tiers were iced in white vanilla buttercream and the bottom tier iced in sage green vanilla buttercream, to match one of the wedding colours, and adorned with edible silver leaf. Then we arranged real flowers, supplied by the florist, onto the tiers (making them safe to be inserted into a cake on the way). The cake topper was supplied by the happy couple.
We also baked a small, traditional fruit cake mainly for the groom and father of the bride. This is slightly spiced and packed full of fruit. It was then fed brandy and glazed in an apricot jam
