I’ve only really practiced a couple of times since a weekend course to learn how to paint on cakes, so yesterday I challenged myself to decorate a Christmas cake without any sugar flowers.

I used the gorgeous hellebore sugar flowers I made a few months ago as the inspiration, and I can honestly say I really enjoyed the time spent just being creative.

I hope you like cake as much as I do.

There is a fragile beauty about sugar flowers, they are so delicate and when they are white there is something even more beautiful about them.

Welcome to spring cakes

As much as I hate to wish away time I am so grateful that we are now in spring and have some sunshine.

When I think of cakes in spring they are pretty and floral with lots of yellow, lilac, pink and orange.

1. Edible sugar daffodils on a vanilla cupcake with lemon buttercream

2. Pretty pink flowers in vanilla buttercream

3. Edible lilac sugar flowers on a vanilla cupcake with lemon buttercream

4. Non edible sugar roses and edible daisy style flowers on a cupcake filled with black cherry conserve with an almond buttercream

5. Stunning buttercream peonies and roses

6. Non edible sugar roses

I love making spring themed cupcakes as there are lots of possibilities. You can have pretty edible sugar flowers made from sugar paste or buttercream or you can have stunning non edible sugar flowers that can be kept as a keepsake from your special day.

If you can’t decide on the type of flowers you’d like to have on your cupcakes you can always have a mixture.

As it’s the start of April and we haven’t played it for a while I thought today would be the perfect day for a game of fake or flower.

Some of you will know that when I’ve made a flower from sugar I’ll often then try to grow it in the garden.

Then from that in my stories we started to play fake or flower where you guess which photo is the sugar flower and which is the real flower.

To play you need to swipe through the photos and decide which are beautiful handmade sugar flowers that I might use when decorating a celebration cake, and which are real flowers.

I’ve been making these gorgeous sugar roses for a cake this weekend and although I’m doing something else with them I thought they looked pretty next to some spare leaves I had so put them together into a quick mini arrangement.

Let me introduce you to one of my favourite cakes ‘Shades of the Coast’

This is an example of how you can have a themed cake without it being a novelty cake.

For me these three tiers have it all, texture, hand crafted sugar flowers and hand painted details.

On the top tier there is a peony to represent the froth of the waves along with some lighter blue and white ginkgo leaves as the cresting waves.

The middle and top tiers have added texture with royal icing to help give the impression of sea spray.

The bottom tier is covered in hand painted ruffles that have been individually shaped and applied to reflect the movement of crashing waves.

When I see this cake I can hear the sound of waves crashing on a beach. I’m reminded of summers spent on the beach, rock pooling and playing in the surf.
