Chocolate Sponge, Cookie Sponge, Chocolate Sponge and another layer of Cookie Sponge.

Filled with silky white chocolate ganache and Oreo crumbs, then covered in smooth white chocolate buttercream.

This one is absolutely ROARSOME! 🦖

What I love as a baker (and definitely not a photographer 😂) is how apps like Canva and Photoroom can make cakes look completely Instagram-worthy. I always send customers the original photo first, followed by my Instagram version, just in case!

Because honestly, the edited one always looks so blinking perfect that even I sometimes think, "Did I actually make that?" 🤣

Drip cakes are making a comeback and I'm not mad about it! 😍

Remember when we all went through a phase of putting absolutely everything on top of cakes? Well, the humble drip cake has dusted itself off, put its chocolate heels back on, and returned to remind us who's boss.

Simple, elegant, and still capable of making people say, "Ooooh!" before they even ask what flavour it is.

Although, let's be honest... give me five minutes and I'll still be tempted to add chocolates, biscuits, sprinkles, mini doughnuts and half the contents of the kitchen cupboard!

⚠️ Hot weather cake care warning! ⚠️
If you're taking cake to a BBQ, picnic, garden party or leaving it in the car... don't.
Buttercream melts, cream fillings sulk, chocolate sweats and fondant starts making life choices. Keep cakes cool, shaded and out of direct sunlight.
Then again... cakes rarely hang around long enough in this weather to cause any problems!

When I was 8 years old (not so long ago ), my mum made my birthday cake using this recipe.

I love this tattered old page , if it could talk, there’d be far too many memories hidden in those splatters and folds.

Now my son only ever asks for banana cake for his birthday. Funny how things come full circle.

Such an easy cake to make, light and delicious, but back in 1981 🙈 my mum had me stood there shaking a tin of sterilised cream for the filling. Damn, that felt like an Olympic event and took forever!
