Flavours you won’t find anywhere else 🇯🇵
This is kinako.
Kinako is roasted soybean flour. In Japan, it’s one of the most beloved flavours in sweets. You’ll find it dusted over mochi, stirred into lattes, folded into ice cream, and scattered across dango. It’s everywhere.
In the UK, almost nobody has heard of it.
The flavour is warm, nutty, and naturally malty with a gentle sweetness that reminds you of butterscotch or toasted peanut butter. It has a roasted depth that’s completely unique. Nothing else tastes quite like it.
It’s also naturally high in protein and lower in gluten than regular flour, which makes it one of the more nutritious ingredients in the SANCHA range.
I pair it with crunchy pecans and Belgian caramel chocolate in my premium crumble cookie. The nuttiness of the kinako, the crunch of the pecan, and the richness of the caramel chocolate all work so well together.
You won’t find kinako cookies on any shelf in Cambridge. Or anywhere else in the UK for that matter.
This is the first in a series where I’ll be sharing the Japanese ingredients that make SANCHA different. These aren’t flavours you’ll find anywhere else 🍪
