I believe you are what you eat, & for the past 25 years my family has celebrated organically grown wholefoods. Additive free food, produced with respect for people & places, has been the single most important influence on our day to day life. Food has shaped our business life as well as our family life. Having previously owned a successful vegetarian café, I wanted to bring a new taste to cat
ering from a trailer. In ECO Catering I concentrate on using organic, Fairtrade & locally grown ingredients. I make all the food myself in my registered & approved kitchen in Bridlington (starting at 5.00 a.m.) before bringing it up to RSPB Bempton for visitors to the reserve. My approach to cooking for my customers is the same as it is to cooking for my family … only the best will do. I use only organic flours, beans & pulses; organic milk & butter; & I seek out seasonal organic fruit & vegetables wherever possible. All of the tea & coffee I use is either organic &/or Fairtrade or Rainforest Alliance certified. I will only use free range eggs, most of which I buy from local suppliers whose hens I see in the fields when I am driving to work. If there is ever a day when I can’t get hold of any free range eggs that will be a day without cakes! I make all of my own bread, using stone ground organic wholemeal & unbleached white flour. Concern for the environmental impact of my cooking & selling of food extends to the packaging & tableware I buy - all of the cups, plates & cutlery you use here are recyclable or biodegradeable. During the main visitor season (April to August) I will be open six days per week from approximately 10.00 to 4.00. From September 1st my two days off will normally be Thursday & Friday, subject to weather forecasts. Bad weather can make serving from a trailer impossible, so my days at the reserve may vary if high winds or heavy rain have been predicted. After September I will open weekends only, weather permitting.
