- You can rearrange icing and cake combinations, not have icing at all, or even ask for a specific cake not listed.

-Any cake can be made vegan although making the icing vegan would be extremely expensive though still tasty. We suggest you try a drizzle in its place.

I just made my first batch of succesful, gluten-free, white bread! It idoes not crumble like normal gluten-free bread and is chewy like wheat bread. Price of a small loaf still to be determined.

If you have a particular flavor of cake that you would like "I Can't Believe It's Not Gluten!!" to make or if you have requests for new products don't hesitate to contact us! We are here so that all of you non-gluteners feel that you are not sacrificing any culinary experience, because good food is one of the best things in the world.
I am currently working on a gluten-free white bread after several request from people devoted non-gluteners who want toast and jam.

Remember, if you are living in Cuenca and want to see "I Can't Believe it's Not Gluten!!" cakes in more flavors or in more restaurants you need to let the owners know. Request them!! You have a voice that restaurants will listen to because they want you to eat at their establishment.
