New RM stone drying on a rainy day!
As per Rackmaster’s instructions:

🆘First bake instructions are an absolute MUST before using the RM for the first time.

Set oven to 50 degrees and bake with door sealed and flue open for one hour.

Every one hour I turn the oven on by 10 degrees until I reach up to a 100 degrees.
Then I ll turn the oven off and let cool.

Next week will be its first bake!

By slowly increasing the heat in the first bake, any residue moisture absorbed in transport or storage slowly evaporates.

My dad has a carob tree and it yields so many carobs, so every year I make my own carob flour/powder. Not an easy job but it has become a thing now!

In Cyprus carobs were our local “black gold” as we used to export so much. They were also called “chocolate of the poor” because of their distinct cocoa flavor.

Today carob powder, and syrup, are considered superfoods and they cost quite a lot - unless you make your own 🤭

Mr Culprit (aka my pasta madre) after a month in the fridge. Sad looking for sure, sticky, hungry and ugly but lots of activity hiding there.

Fed it at its usual 1:1.2:45%. Was rather slow but 6 hours later he had gracefully doubled and surprisingly the PH was fantastic.

Of course it’s not ready to use and its texture is still sticky but it’s on the right road. A couple of days of consistent feedings/monotoring and it will be ready to shine.

Cold baking and all the details:
1. I’m using an enamel pot. Mine is a 30cm Falcon roaster.
2. Put the pot in a cold oven and set the oven at fun mode at its highest temperature.
3. Bake 50’
4. Remove the lid. If you are happy with the color take it out, if you want it darker leave it for a few more minutes.
