The traditional method of killing involves testing the coordination between the person and the heat.
The temperature of the pot needs to reach around 340℃. Then, all at once, the fresh leaves are poured in and the process lasts for five minutes. The fresh leaves are quickly tossed with both hands, making a loud noise as they are fried in the iron pot. The leaf temperature reaches around 74℃. The completion of the steaming process is determined by the color, weight and aroma of the fresh leaves. Therefore, killinging-green is a critical stage of making tes. It requires the skilled tea master to concentrate fully and use the temperature of their hands to create a pot after pot of fresh leaves.
