When you lose your passion for baking but still want a yummy dessert. This is sooo incredibly easy anyone can make this tiramisu!

EASY TO MAKE TIRAMISU!
I miraculously found Schar Ladyfingers - can't remember where I bought them - but saved them for my Father's day brunch.

Lay them in my baking pan, drizzled espresso on top of the ladyfingers - because if you dip - they turn soggy immediately! Don't dip - DRIZZLE!

FILLING
Next - because I'm also dairy-free I used refrigerated AROY D Coconut Milk in a can and whipped just the solids (you want full fat coconut milk) - just like you would do whip cream. You can use whip cream if you tolerate dairy.

Next I folded in cooked vanilla pudding (made with soy milk) for dairy you could use mascarpone or a similar cheese - I ended up using Greek Yoghurt for the dairy version.

Sprinkled in some chocolate chips for some added texture. You'll even notice in one of the pictures I ran out of ladyfingers and made some oatmeal chocolate chip cookies in the shape of lady fingers - they worked - but didn't provide as light of a dessert as I was hoping.

ASSEMBLE
Make layers alternating cookies and filling - as many as you have ingredients for - could be 2 or 3 layers.

TOP with cocoa powder or chocolate chips, curls, shavings -whatever you like.

LET SIT OVERNIGHT IF YOU CAN - or at least 4 hours
This is important for the cookies to absorb all the pudding, whip cream, etc.

SERVE

So yummy, light and refreshing

The 2nd time I made this I used the Kinnickinick brand of Vanilla wafers and it was equally as good. Just be prepared to buy 2 boxes if you're feeding a family or 6 guests. This is our new favourite dessert - give it a try!
