Filipino Pandecoco ( Bread with coconut filling) 🇵🇭🌴🌴

DOUGH
1/2 cup butter
1 cup milk
4 cups all purpose flour
1/2 cup sugar
1 tbsp instant dry yeast
1 tsp salt
FILLING
1 1/2 cups desiccated/shredded coconut
1/2 cup brown sugar,
1 cup milk
1 cup water
3 tablespoons butter
1/2 tablespoon vanilla extract
2 tablespoon flour, dissolved in 1/4 cup milk
Egg Wash
1 egg, beaten
INSTRUCTION:
DOUGH
Combined butter,milk in a small pot and keep on stirring until melted. In large bowl or stand mixer, combined flour, salt, sugar, dry yeast. Pour the butter mixture and forms a dough.
Knead the dough for 4-5 mins. Place the dough in a greased bowl and cover with a plastic wrap or a clean kitchen towel. Leave it to rise for 1 hour to an hour or until it doubled its size.
FILLING:In a pan, combine desiccated/shredded coconut, brown sugar,milk, water, butter, and vanilla extract. Over low heat, bring to a simmer. Cook until liquid is absorb, add 2 tablespoon flour, dissolved in 1/4 cup milk, stirring regularly until thick. Set Aside.
FILLING THE DOUGH
After 1 hour, roll the dough into a log and cut into half. Roll each half again and cut into two. Divide each log into 6 equal parts for a total of 24 pieces.Flatten each dough with the palm of the hand and add about 1 tablespoon of coconut filling in the center. Pinch the corners together to fully enclose the filling. Arrange the filled dough on a baking sheet at about 1 inch apart. Using a fork, poke small holes in the center of each filled dough. Cover with a clean kitchen towel and let them rest for another 30 minutes.
Bake in a 350 F oven for 8-10 minutes. Remove from the oven and brush with egg wash. Return to oven and bake for another 8 minutes or until golden brown.
