Join us on the 11th of April and learn all about pre-ferments... Not as complicated and involved as sourdough... but a wonderful way to add flavour, texture, character, and an extended shelf-life (without the addition of preservatives) to your loaves. Kinda neat, if you ask me!
Definitely worth adding to your baking repertoire - if you are serious about bread, that is!

Pictured: White Sourdough with Walnuts

Did you know that walnuts make the bread dough turn purple?

This is the result of a natural chemical reaction. The tannins in the walnut skins react with the iron in the flour, causing the dough to turn various shades of purple.

Simple science. Pretty cool, no? No need for fancy dyes... just natural ingredients doing their thing.

100% AP flour
75% hydration
20% walnuts
20% levain

Saviez-vous que les noix de Grenoble font virer la pâte à pain au mauve ?

C’est le résultat d’une réaction chimique naturelle. Les tanins contenus dans la peau des noix réagissent au fer présent dans la farine, ce qui donne à la pâte diverses nuances de violet.

C’est de la science, tout simplement. Plutôt cool, non ? Pas besoin de colorants artificiels... juste des ingrédients naturels qui font leur magie.

I haven't baked Baguettes since I left South Africa in 2020. Not in a proper oven that is... so chuffed with the results I got on the first test bake in my deck oven from 🔥 Hot for sure!

Still a bit of recipe tweaking necessary... will play with the hydration % and adjust the scoring technique a little. Also loving the beautiful bread flour from 💛
