Here’s a quick and simplified recipe for a 30-minute chicken biryani:

Ingredients:
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 1/2 cup plain yogurt
- 2 tablespoons Deb’s Biryani Spice Blend
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 4-5 green cardamom pods
- 4-5 cloves
- 1 cinnamon stick
- 2 tablespoons cooking oil
- Fresh coriander and mint leaves for garnish
- Salt to taste

Instructions:

1. Rinse the rice thoroughly and soak it in water for about 15 minutes.

2. In a large pot, heat oil over medium heat. Add cumin seeds, cardamom, cloves, and cinnamon. Sauté for a minute until fragrant.

3. Add sliced onions and cook until golden brown.

4. Stir in the ginger-garlic paste and cook for an additional minute until the raw smell disappears.

5. Add chicken pieces and cook until they are browned on all sides.

6. Add chopped tomatoes, Deb’s Biryani Spice Blend and salt. Cook for 2-3 minutes until the tomatoes are soft.

7. Mix in yogurt and cook for another 2-3 minutes until the chicken is well-coated.

8. Drain the soaked rice and add it to the pot. Stir gently to mix the rice with the chicken and spices.

9. Pour in enough water to cover the rice, about 4 cups. Bring it to a boil, then reduce the heat to low, cover the pot, and let it simmer for 15-18 minutes or until the rice is cooked and the water is absorbed.

10. Once done, fluff the biryani gently with a fork. Garnish with fresh coriander and mint leaves.

Quick and Easy Vegetarian/Chicken Fried Rice Recipe🥢

Ingredients:
- Cooked rice (preferably cold, a day old)
- Tofu, cubed or chicken cubed
- Mixed vegetables (carrots, peas, corn, and diced bell peppers)
- Soy sauce
- Sesame oil
- Garlic and ginger (minced)
- Scrambled eggs (optional)
- Green onions (chopped)

Instructions:
1. Heat sesame oil in a pan and sauté minced garlic and ginger.
2. Add cubed tofu or chicken and cook until it turns golden brown.
3. Add mixed vegetables and cook until they're tender.
4. Push the tofu or chicken and vegetables to one side of the pan, add a bit more oil, and scramble eggs (if using).
5. Mix the scrambled eggs with tofu/chicken and vegetables.
6. Add cold, cooked rice to the pan and stir to combine.
7. Pour soy sauce over the mixture and continue stirring.
8. Garnish with chopped green onions.
9. Serve hot and enjoy 🥢
