Before baking chocolate chip cookies you have to decide what you prefer. 🍪
Not all chocolate is created the equal and the type you use will determine the outcome. 🧐
It’s all in the ratio of cocoa butter to cocoa solids. ⚖️
Chocolate chips have a lower ratio of cocoa butter which is why they maintain their shape and even their pointy peaks after being baked into the cookie. 🔥
If you like melted gooey chocolate in your cookies then opt for using chopped up chocolate bars since they have a higher cocoa butter ratio and are designed to melt. 🍫

I think this is great! A drink made from the pulp of the cacao fruit which is normally discarded in the chocolate making process.

If you’ve taken one of my chocolate tasting experiences you’ll recall me explaining all the parts of the cacao pod and it’s role in making delicious chocolate.

The waste reduction and therefore sustainability of this drink is admirable. And it tastes great!

Too bad it isn’t available in Canada yet… I had to buy this in the US.

This is SO deceiving!!

Did you know you can’t make a milk chocolate bar by simply pouring liquid milk into melted chocolate?

The water in the milk doesn’t blend with the cocoa butter in the chocolate.

Daniel Peter and Henri Nestle figured that out in 1876 when they created the world’s first milk chocolate bar 🍫
